Clean Eating with Skinny Kitchen expands into Islington

Another new location from The Skinny Kitchen bringing of clean eating to Islington as it was founded in 2014 in Ibiza by husband and wife Joel and Lois Belchem. They are now expanding to locations in Canterbury, Kent and Ealing Broadway. Their passion and desire to bring something unique to the food industry in Ibiza has enabled them to give people tasty and nutritious food plus a trendy place to go to!
Pleased to see the Skinny Kitchen is expanding over in UK, as I had a interview with Joel and Lois,
Start from the beginning how did you get to where you are now?
I had my gym and I always was ambitious. I realised I wanted a bit more from my business path and, because I saw the gap in the market for a healthy place for fitness-passionate individuals. We packed up, sold the gym, moved to Ibiza and opened our first Skinny Kitchen there.
What is your greatest achievement and biggest challenge?
My greatest achievement is having my daughter. Biggest challenge is balancing raising my daughter and maintaining a healthy family alongside a healthy thriving business.
How do you start your day, talk me through this?
5am gym and coffee.
How is your business moving with the new millennial and social media presence?
I am big on moving with the times and the whole venue, interior design wise is built to appeal to millennials with the ability to promote the venue on Instagram.
What advice do you have for other entrepreneurs and business owners?
Not to focus on making moves based on the money but find the line between passion and finances
What do you wish someone told you?
How hard it is to run a restaurant
What personal item could you not do without and why?
My phone and laptop as that’s where I run my business admin
What 3 individuals famous or not would you like to be stuck in a lift with and why?
Jay Z, Russell Brand and Barack Obama. Jay Z obviously who wouldn’t want to meet Jay Z. Russell Brand would make the situation more enjoyable. Barack Obama to balance things out.
In your opinion what makes a good entrepreneur?
Someone who is passionate, organised, and relentless
In what way do you think your background shaped you in starting your business?
By working for Sony and Virgin Media, I realised it wasn’t fulfilling for what I wanted in life. I had higher aspirations of where I wanted to go and do.
Since you’re originally from the UK, what gave you the impetus to launch The Skinny Kitchen brand in Ibiza and then take it to the UK?
Just because we spent so much time in Ibiza and we knew how much there was a need for an accessible healthy options in the restaurant scene. Based on the success of the Ibiza site, we were given the opportunity to open Skinny Kitchen in the UK.
What are the highs and lows of being a restaurant partner?
Highs are seeing it busy, seeing people enjoying their food and getting good reviews. Lows are the quiet periods and if a customer isn’t pleased which is unavoidable as you can’t make everyone happy.
What’s the biggest risk you have taken and how did it turn out?
Dropping everything and moving to Ibiza. It turned out alright.
How did you manage to thrive in an industry when others fail?
There’s so much competition that you need to stand out and have a niche.
What are the main differences between the restaurant industry in Ibiza and London?
In Ibiza, people are more frivolous as they are mainly out there on holiday. In the UK, customers are coming in from work, on their work break as we are busiest for breakfast and lunch bookings.
What are your 5 pearls of wisdom?
Be passionate, relentless, unique, lead the way, don’t focus too much on financial gain
What does the future hold for The Skinny Kitchen?
We are going worldwide into the UK, USA, UAE and will be opening further locations soon. Watch this space…
What an exciting time ahead for the Skinny kitchen, I love their determination and passion. The Islington location is perfect, as it’s a great mix of trendy independent restaurants and cafés on its busy high street with offices and The Business Centre.
Loving the Ibiza origins with tropical island-inspired interiors and it has a large heated outdoor terrace. I absolutely love the decor inside, sleek pink and beautiful teal seating with fresh plants, marble table tops. It is certainly an instagram-worthy dining experience! It’s fabulous idea to sneak a peek through the open kitchen to see all the fresh and healthy dishes being prepared.
There are so many delicious dishes, once we sat down and read the menu we couldn’t decide what to have! We decided the best course of action… Share a bit of everything – win win!
Blue corn tortilla tacos (Blackened Cod and Crispy Avocado) has a kick and I haven’t tried before. The blue corn tortilla tacos were so nutritious, tasty and innovative.
We shared the Chicken Satay Burger, with sweet potato fries, and halloumi fries, I have to say this is one of my favourites. It was absolutely delicious and the charcoal bun was fluffy and light with added flavour from the charcoal.
We just couldn’t finish our lunch without having dessert, I chose the Berry and Matcha pancakes. When it arrives at our table I just couldn’t believe how many layers of pancake and the beautiful berry compote drizzled on the top with a scoop of Matcha ice cream all for an amazing 425 kcal! I absolutely loved it but try as I might I just couldn’t finish it. My friend had the Salted Caramel Crumble, which was light and fluffy with a lovely granola crumb.
All the desserts on the Skinny Kitchen are homemade with refined sugar and vegan!
The service is outstanding, they made double sure we were happy with our meals, we just couldn’t thank them enough for a wonderful clean eating dining experience. If your lifestyle is all about healthy food, you’ve come to the right place! The Skinny Kitchen care as much as you do about the food that goes into your body.
