The Feathered Nest Country Inn welcomes Chef Matthew Weedon
The Feathered Nest has exciting times ahead after a change of ownership and a brand new Head Chef. Following the retirement of the former owners, Adam Taylor, chief executive of Nested Hospitality, has since taken on the site.
From a young age, hospitality has always been in Adam’s DNA. His passion for hospitality has taken him across the globe, from Vancouver and Cape Town to West Africa. However, Adam has always dreamt of owning his own restaurant/bar in The Cotswolds and his new undertaking at The Feathered Nest certainly ticks these boxes.
Describing what first attracted him to the Feathered Nest Adam explained: “the picturesque Cotswolds location, award-winning food offering and stunning views across the valley.”
He added: The team (new and old) have been fantastic, stepping up to the challenge, embracing changes and steering the new direction of The Feathered Nest.
The new head chef, Matthew Weedon, certainly shares Adam’s enthusiasm for breathing life into the Feathered Nest.
Having worked his way up through the restaurant industry, Matt was appointed head chef of Glenapp Castle in Ayrshire. It was here that he won his first Michelin star. Weedon later moved to Lords of the Manor in the Cotswolds in 2008, where he was appointed executive chef. Just a year later, history repeated itself and the hotel’s restaurant won a Michelin star under his leadership.
A local resident, Weedon has been a supporter of The Feathered Nest before taking up the position of Head Chef. Moving forward, he intends to extend its ties with local producers and has plans to build its local following.
Weedon said: “I’m thrilled to have joined The Feathered Nest team at such an exciting time. We’re trying to pick and choose the best ingredients around to bring in, not just to bang the local drum for the sake of it, but because the local produce is that good.”
The Feathered Nest Inn now offers a tasting, à la carte and bar menu, with events such as community supper clubs and music nights aimed to reengage and bring together the local community.
With Adam Taylor at the helm, and Matthew Weedon showcasing the best of what the region has to offer, who knows what dizzy new heights The Feathered Nest will reach.
