Heaven & Hell: The 2021 Menu
This year’s theme, Heaven & Hell, delivers a series of “earthly pleasures” rich in flavours from start to finish. Chef Adrian Marín leads the kitchen, supported by Pelayo Menéndez, Luis Rodríguez, Alicia Pelayo, and pastry chef Marcos Curiel. The menu evolves annually and promises to impress.
Starters feature fresh, shareable dishes like tomato tartare (a returning hit), steak tartare, ceviche, and tuna cones.
Mains highlight premium meats—suckling pig, Churro of Denomination of Origin, Chilean Wagyu, and coquelet—and seafood such as octopus, whole squid, wild sea bass, or rice with scallops and prawns. Desserts dazzle with inventive flavours and presentation.
