Finca La Plaza Ibiza: where plates showcase gastronomic technique
In the heart of Santa Gertrudis, Finca La Plaza is one of Ibiza’s most distinctive gastronomic destinations, bringing seasonal Mediterranean cooking to a centuries-old finca just behind the village square.
The kitchen is led by Island Hospitality’s culinary team, with an approach rooted in Mediterranean tradition and the produce of the island. Around 80 per cent of ingredients are sourced from local farms and producers, and the menu changes regularly according to what is in season. Fire, fermentation, smoke and citrus are recurring techniques, used with restraint to bring depth to ingredients rather than overwhelm them.
Cooking over charcoal is central to the menu. Signature dishes include wild line-caught whole sea bass cooked over fire with fermented citrus, alongside the Finca Wellington, grilled octopus and carefully sourced meats and vegetables. The result is food that feels connected to Ibiza without being constrained by a conventional idea of Ibicencan cooking.
Wine is given equal consideration. The cellar runs to more than 350 labels, spanning Spain, France, Italy and further afield, with rare vintages sitting alongside smaller producers and bottles selected specifically to complement the kitchen.
Dinner is served in a candlelit courtyard surrounded by whitewashed stone, mature olive and citrus trees, and the sounds of Santa Gertrudis beyond the walls. It is atmospheric without distracting from what is on the plate; the reason to come is the cooking, with the courtyard providing its natural backdrop.
