Hailing from sunny Martinique, chef Marcel Ravin combines his own food memories with the delectable produce of the Côte d’Azur, creating studied and delicious flavours. Signature dishes include organic egg with truffle, cassava and maracuja juice, as well as chocolate and passion fruit partition with cocoa bean and passion fruit sauce. Everything at Le Blue Bay is carefully considered, right down to the cutlery, with customised plates made by a potter from Ravin’s homeland.
